‘Mama Said Knock You Out’
Tired of that pint sized-food connoisseur (aka ultra picky eater) in your life? Ever want to throttle/’knock out’ (in the words of LL Cool J) that special preschooler/toddler that won’t eat/touch/even lick ANYTHING you prepare for him/her/it?
Well, try this recipe for Coconut Almond Butter Balls on him/her and watch what happens!
Okay, so I can’t guarantee that this recipe will work on your difficult case, but I can say that it did work for one 2 year old with a very ‘refined’ palette.
A good friend of mine, ‘Ms. Kate’, customized this recipe for her 2 year old and they were an absolute success (as you can see from the shots below). I don’t have a picture of the end product (other than the crumbs you see dotted around the mouth in the photos below), so if you do end up trying this recipe and you found it to be a winner, please take a picture of it and submit it on our website!
Coconut Almond Butter Balls
1/3 cup Almond Butter
1/2 cup finely shredded dried coconut
1 cup crushed cornflakes (could use rice crispy style cereal too)
2-3 tbsp honey
1/4-1/2 cup dried dates, chopped in food processor with a little water, chop till sticky and lumpy
1. Mix all of the above together
2. Make little balls (they are quite sticky) and roll in coconut
3. Bake on sheet pan at 400 degrees for 5-6 min
4. Let cool completely before touching or moving. Note: it takes the cooling process to harden them a bit.
