It always seems that my breads, no matter how many times I make them, turn out good, but slightly different each time :)
I'm funny about eating things I am not sure of, whether it be foods that I am not sure of regarding their origin or things that folks make and bring to, say, potlucks. My kids use to go to church potlucks and only eat the food we brought because they didn't know what ingrediants were involved in the "is that meat in there or ???" !!
