Happy Independence from the Kingdom of Great Britain!
Seems rather appropriate that I should write a post on July 4th from the UK!
I have been in the kingdom for 5 days now, and have had a glorious time to date. British cuisine is traditionally renowned for being pretty bland and unimaginative. This is kind of outdated really, as over the past decade or so, food in the UK has improved a lot! I have to say though, there is nothing wrong with good old bland fish & chips with salt & vinegar
Here is a portion I had while visiting Windsor.

Ok, so besides the fish & chips, the highlight of my culinary outings in London this past week was this very simple tasty salad I had for lunch at this restaurant in Farrington. The ingredients were arugola (rocket in the UK), carmalized onion, water melon and beetroot, with goat’s cheese and a bread selection on the side. The dressing on it was quite mild, given the strong flavor of the arugola, and it had a slight tangy lemon taste to it. I am definitely going to recreate this at home!!!

I will write more soon about my love for Marks & Spencer’s FoodHall, and a 101 on British breads/baked goods. There is a lot of confusion out there on what an actual English muffin looks and tastes like.

Keep the food diary coming, Kat! I love it!
How I miss Marks & Spencer’s! It is a very good job that I am living in the US as I would be bankrupt if I lived near one!
Yeah, Marks & Sparks’s foodhall is a dangerous place for money. Everything is just so yummy there, and such high quality! I will take my camera with me next time I go and take some shots to make everyone’s mouth water!!!
