Rotten Cheater: Raspberry Donuts

He, the boy I stole flirtatious, yet desperately furtive glances at throughout the night, finally made his way over to me.  He swaggered, slowly and steadily, making his way towards me.  Mr. Makes-Any-Hot-Blooded-Woman-Break-Out-In-a-Full-Body-Sweat walked towards me and stared directly at me…. actually, make that right through me.

With zero trace of sleaze and the kindest gentleman-y graciousness, he slightly parted his lips and drew in a deep…. slow…low breath.

“You have the most beautiful smile, did you know?”

Fainted.  Right then and there, I did.  And I fell in the deep, deep fantasmical abyss called love.

Those were the first words that my husband ever said to me.

Seven years later, we were married.  I felt special.  I felt loved.  I felt irreplaceable, you know?

Until I was replaced.  By someone else.  Another person of the female kind.  Three years into our marriage.

Most married women never imagine being replaced once.  But it happened to me, not once.  But twice.  The second substitute-for-true-love came a mere two years after the first infraction.

Who the hell were these women?

Not women yet.  But babies.  Little baby girls.  Our baby girls.   The two most gorgeous baby girls anyone has ever seen.

If you ever want to see the purest, humanly innate, most passionate and raw demonstration of love in its basic form, observe my husband anytime he is in the vicinity of his daughters.  These ladies make him swoon and trip over punk-drunk in love.

This type of love goes far beyond one’s ability to take his (or anyone’s) life for the child he helped bring into this world.  If called upon to do so, my husband would create miracles for his children – he would perform stunts never before imagined if he could guarantee his daughters’ happiness and health.

This kind of infinitely limitless love is generated in a space that only the most wonderful and phenomenal fathers in the world inhabit.

We love you, Daddy.  Happy Father’s Day.

Raspberry Donuts

These donuts are less like the yeast-y ones you can buy at Dunkin Donuts and more like churros (sometimes known as a ‘Spanish Donut’).  These donuts are chewy, but not overly so.  The fresh raspberries add a very fresh tangy-ness not generally associated with a donut!  Good with coffee in the morning as with a cup of tea in the afternoon.

Ingredients:

Pizza dough (homemade or bought from store)
Vegetable oil
1 pint of raspberries
1 ½ cup of sifted powdered sugar

Directions:

In a large pot for frying, add enough vegetable oil so the oil is about 2 inches up from the bottom of the pan.  Heat should be about medium.

In the meantime, roll out your pizza dough to about ½ inch thick.  Make sure there is enough flour on your board so the dough doesn’t stick.  Using a round cookie cutter and an apple corer/something else small and round, cut out your donuts.   Gather the scraps and re-roll to make more donuts.

I don’t’ have a candy thermometer, so I can’t tell you the temperature, but you’ll know that the temperature of your oil is at the right temperature when you add a piece of the dough and it immediately bubbles up to the top.

Once the oil is at the proper temperature, drop in your donuts and cook on each side for about 30-40 seconds.  Drain onto a plate lined with paper towels.

In a small bowl, macerate about ½ a handful of raspberries with either your hands or a fork.  Add 1 cupd of sifted powdered sugar and mix vigorously until you create a glaze/frosting.    Add more powdered sugar to get a relatively thick glaze/loose frosting texture.  Dip the donuts into the glaze/frosting.  Let set for a few minutes and then eat!
