If Life Crumbles…

One day last week I had an abrupt visit by a migraine headache, followed by a bout of the cold that knocked me out. All I could do was mourn the change in seasons, when I inevitably get sick and wonder why I don’t live somewhere more temperate. As far as my desert blood is concerned cold weather is never a good thing, even though I adore fall colors and harvest. In my malaise people were coming over Sunday morning and I wanted to drown my sorrows in the kitchen. What better than my go-to recipe for apple crumble, the same one my mom’s been making for decades, a tried and simple way to bring sweetness and comfort into the home.

I didn’t want to leave the house. We had fortunately bought apples at a market the weekend before, and I had two types of dried figs in the cupboard. From the ‘eastern’ section I threw in some pistachio, cardamom, and pecans. I finished it up with pomegranate molasses drizzle on the plate for some contrasting tartness.

So this is my fall mantra: if life crumbles…
… get off your bum and make a crumble.


Apple-Fig-Nut Crumble

Apple-Fig-Nut Crumble

4-5 cooking apples (Granny Smith)
1 dozen figs, 2 types: Black Mission and Calimyrna
1 tspn cinnamon
1 tspn cardamom
1 cup flour
1/2 cup butter
1/2 cup sugar
1/4 cup pistachios
1/4 cup pecan morsels

1. Heat oven to 350. Lightly grease pie plate or shallow casserole.
2. Peal and core apples. I highly recommend a melon baller for the job. Chop the apples into small wedges.
3. Cut figs into small circles and discard stems.
4. Mix apples, figs, cinnamon, and cardamom in saucepan on medium heat with 2 tbs of water. Blanche fruit for 3 minutes, so that apples are not fully cooked.
5. In a food processor, mix flour, butter, sugar, pistachios and pecans. Pulse until the mixture is crumbly.
6. Place fruit in baking dish, then crumble the pastry mix over it. Optionally, keep small morsels of pistachio and pecans to garnish on top.
7. Bake for approx 40 minutes or until golden crust and juices bubble.
8. Serve warm and either alone, with vanilla ice cream or custard, or with a pomegranate sauce (mixture of pomegranate molasses and sugar).

    Now that winter is here, this is definitely a tempting crumble to try out.

    Could I just make a suggestion to Zomppa on behalf of your readers outside the US who do not measure in cups and fahrenheit, that it would be helpful if all quantities could be given in ounces and grams while temperatures should also be given in centigrade. Many thanks.

  19. Yum crumble…Boo migraine! I get them too and have been having them more frequently. I wonder if I could convince my husband that if he made me this crumble the headache would go away?
