Blissful Banana Bread
There’s few baking smells which are as glorious as banana bread slowly baking in the oven. Normally packed full of butter and sugar this recipe allows you to indulge in this comfort food without the guilt of putting on a few pounds in the process.
Sugar vastly reduced……butter gone………taste…even better!
The Ingredients:
300g Mashed Bananas
200g Flour
2 Eggs
60g Brown Sugar
70g Caster Sugar
3tbsp Apple Sauce
50ml Semi-Skimmed Milk
1tsp Vanilla Extract
1tsp Bicarbonate Soda
1tsp Baking Powder
0.5tsp Salt
The How-To:
Preheat oven to 160c
Beat the apple sauce and sugars together until smooth. The apple sauce replaces the butter, and in my opinion adds a lot more flavour too!
Beat in the eggs one at a time until well combined.
Mash the bananas and slowly stir these into the mixture alternating with the milk until both are combined.
Stir in the vanilla extract.
In a separate bowl sieve the flour, baking powder, bicarbonate soda and salt.
Fold the flour into the banana mixture and continue mixing until well combined
Pour into a 7 or 8 inch loaf tin with a rectangle of baking paper at the bottom to make it easier to turn out later.
Bake in the centre of the oven for 40 mins or until a skewer inserted comes out clean.
Allow to cool for 20 mins before turning out and allowing to cool completely before cutting.

A banana bread is always welcome in my family, where I like to provide some extra nutrition to my kids in whatever I cook or bake. Fortifying the bread with Iron by adding bananas is really a good idea, not to mention the unique flavour it adds to the bread! Thanks for the recipe!! The photographs look tempting, too!!
