What’s Really Scary – Apathy: Apple-Pumpkin-Ginger Soup

For those of you in the United States, Happy Halloween!

What’s in store tonight? Ghoulish gummies? Mummified marshallows? Creepy chocolates?

You know what’s scarier than lurching zombies and cackling witches?

Apathy.

By now, many of you know about the horrific, sad story of two-year old Yueyue, who died after sustaining injuries from a hit-and-run and being visibly ignored by 18 passerbys. There are links to the video, but I won’t put it here. Suffice it to say, it’s horrific.

Of course, words are being thrown around about whether this lack of caring is a condition unique to China – has the rapidly growing push to economic success taken precedent over lives? As James Fallows of The Atlantic and others have noted, unfortunately, apathy – and apathy to the extent of a death – is not unique to China.

While there are still (thank goodness) many, many examples where people do extend a hand to strangers in need or even risk their own lives for others, there appears to be an alarming desensitization of others and the world around of us. We sometimes get so focused on “getting there” or rushing from one to the other that we don’t pay attention to what is right in front of us. It’s easier to be complacent and worry about just ourselves.

And this apathy includes how we view our food, treat our bodies, and care for our animals and planet.

It’s no secret that we here at Zomppa stress a more conscious approach to how we eat, cook, and live. How the very food we put in our mouth is connected to how we want others to eat, animals to be treated, and the Earth to be care for.

Yet sometimes, it seems like we’re preaching to the choir. Many of you read us because you agree. So how can we move beyond and stir up others to action? To move beyond the passive action of reading?

It’s one thing to write about eating local produce, but it’s another to find ways to bring local produce to those who do not have easy access. It’s one thing to come up with great recipes for organic tomatoes, but it’s another to find ways to bring rights to tomato pickers. It’s one thing to bring recycled bags to the store, but it’s another to write to your congressmen about recycling.

This is one of the reasons why we and folks like Melissa with Food Fighters are trying to shine the light on those organizations doing good – fighting the natural tendency towards apathy and complacency – so that you can join in their fight.

This is also why we hope you stay tuned here on Zomppa for some exciting initiatives about how we are working to fight apathy about our food, our health, and our planet.

Let’s not let apathy take over. Yueyue’s tragic death is a wake-up call for all of us. To make a difference, we’ve got to actually act. It’s too frightening to think what would happen if we don’t.

A less scary way to celebrate Halloween is this easy-to-make, flavorful soup.

Apple-Pumpkin-Ginger Soup

Ingredients
1 3 lb. pumpkin (cooked and pureed) or 1 can of pumpkin puree
3 cups of chicken (or vegetable) stock (more if necessary, depends on how thick you want)
3 Granny Smith apples (tart, green ones are the best)
1/2 tsp nutmeg
1/2 tsp cinnamon
1 tsp ginger powder
Salt
1/2 cup heavy cream
Parsley for garnish

Directions
1. Chop the apples into 1-inch chunks
2. In a deep skillet, add pumpkin puree and apples. Add stock slowly until enough liquid to cover the apples.
3. Cook the apples under tender (it should get mushy).
4. Add more stock (or puree), depending on how thick you want it.
5. Add the spices – these are just estimates – feel free to add more ginger for added kick.
6. Using an immersion blender, puree everything until blended.
7. Add heavy cream and continue to blend. Add more stock if want more soup-y texture.
8. Garnish with parsley.

    Apathy is very scary, it’s difficult to make conscious decisions every day that make a difference in our own lives as well as the lives of others. I can’t wait to hear what Zomppa has in store to fight apathy!

  3. I love your pumpkin ginger soup. I always love the hint of ginger in food and I often put too much of it that my family complains if ginger is the main dish. Haha. I need a control, but this sounds so delicious!!!
